    Mr. Fang Xinfang, originator of microbiology in China, after examining Shanxi old mature vinegar, stated in his works titled Shanxi Vinegar that “Shanxi vinegar and Zhenjiang vinegar are most famous out vinegars in China. Zhenjiang vinegar is strong and has medical odor, is inferior to Shanxi vinegar. Shanxi vinegar has pure color and odor caused by chemical reaction of the vinegar matured for a long time, and is not artificially made, and it is really the famous product in China”.
    In Tang Dynasty and Song Dynasty, with progress and development of starter propagation technology, vinegar brewing technology has also been updated continuously, which must result in gradual increase of vinegar varieties, and quality must become perfect. In the book titled Essence for Four Seasons in Five Dynasties, it put forward such brewing methods as “rice vinegar, fast brewed rice vinegar, wheat vinegar, fast brewed wheat vinegar” and so on, which indicated that further development of vinegar brewing technology. In Song Dynasty, vinegar brewing industry in Shanxi Province covered urban and rural areas, there was such prosperous condition that “there are vinegar vat in each family, and each one can act as the vinegar worker” in such isolated areas as Taihang, Lvliang and so on.
With development and evolution in several Dynasties (such as Sui, Tang, Song and Yuan Dynasties), vinegar industry in Shanxi Province in Ming and Qing Dynasties reached its peak. One mark is that there were many vinegar workshops, diverse economic forms co-existed. Before Ming and Qing Dynasties, white vinegar in Jinyang is reputable for the mature white vinegar.
    "Shanxi Province is reputable for brewing vinegar in history, and the origin can be found at Qingxu County". During Hongwu Reign in Ming Dynasty, the Master Wang Laifu from “Meiheju” at Qingxu County (called Qingyuan ever) continuously explored and innovated in production practice, increased the “smoking” technology between “acetification” and “vinegar pouring”, namely the “smoking and steaming” method, and the unique flavor of table vinegar of such brand was formed. Since the first year of Shunzhi Reign in Qing Dynasty (the year of 1644), the China old brand “Meiheju” upgraded the vinegar brewing technology to be “insolation in summer and placing in ice in winter”. The vinegar matured for more than one year has black and purple color, has pure fragrance, and was not rotten after storage for a long time, and the people having the vinegar gave high remarks. Thus, the mature vinegar of the past year is called old mature vinegar, and history of old mature vinegar was created. Thus, reputation of “Meiheju” was greatly raised, and the old mature vinegar also became the tribute to the royal and was famous at home and abroad, and it ranked the first place among four famous vinegars in China, and was called “National vinegar” and “the first vinegar in China”.

Baoyuanfang was initially built in the third year of Xuande Reign in Ming Dynasty (the year of 1428).     In recent history, “Shanxi old mature vinegar” produced by “Fuyuanchang” has won the great honor of the first prize in Panama International Commodity Expo held in 1924.
    Thus, it can find that, from origin to development, vinegar industry in Shanxi Province has a history of more than 1000 years; vinegar becomes more fragrant with such a long history.
